Dirty Mushroom Melt Chicken Burger

Think of crunchy breaded chicken, thinly sliced as paper,  enclosed in a fluffy brioche bun. Then imagine pouring warm, melted cheddar, mayonnaise and BBQ sauce. Ok, now add some crispy bacon and lots of sauteed mushrooms! This is how we’ll continue our  #BurgerWeek and I know that you’ll be cursing us as you read this in your office, but you’ll rush home and make it!

Inspired by my favorite burger from my childhood ( back in the days when Sunday’s outing was at Wendy’s ) the Mushroom Melt Breaded Chicken Burger was my favourite! The combination with the crispy bacon and the sauteed mushrooms enhances the flavour, whereas the melted cheddar mixing in with the authentic BRAVA BBQ sauce and the(tastes-like-homemade)mayonnaise tastes divine! . Want to add some veggies? Go right ahead! But we prefer it greasy and dirty!

Dirty Mushroom Melt Chicken Burger

Portions: 2 burgers, Prep time: 10’, Cooking Time: 5’-7’


  • 1 chicken breast
  • 300gr. bread crumbs
  • 1 egg
  • 1\2 cup of milk
  • melted cheddar
  • 8 slices of bacon
  • 6 mushrooms
  • BRAVA mayonnaise
  • BRAVA BBQ sauce
  • 2 brioche buns
  • sunflower for frying

1. Cut the chicken in very thin slices, horizontally

2. Beat the egg with the milk. Season the chicken with salt and pepper and bread it, dipping it first in the bread crumbs, then in the egg, and then once again in the bread crumbs.

4. In the meantime, put the sunflower oil in the pan and let it heat well. When ready, add the chicken and fry until golden brown. Then, place it on some kitchen paper towels for two minutes.

5. In a nonstick frypan, add 2 spoonfuls of olive oil and heat well. Add the mushrooms that are cut in slices, and saute for 3-4 minutes. Remove from the pan and then add the chopped bacon. Fry it for 7-8 minutes until it’s nice and crispy. Warm the cheddar in a bain marie.

6. Make the burger by adding the chicken, the bacon and the mushrooms in the brioche bun.

7.  Add cheddar and sauce in between the chicken, the bacon and the mushrooms.

8. Eat immediately, and enjoy!
